Ever since I posted some pictures of my pancakes (Instagram: thearabfruitlady), I have had people asking me for the recipe left and right. I don't blame them because they were DELISHHHHH. Its filled with coconut flavors from coconut flakes, coconut milk, and coconut oil while fluffy and warm and everything amazing. I topped it off with a chocolate sauce, berries, and some more coconut flakes. And guess what, it was completely refined sugar free and only uses natural ingredients (can be made vegan too!) so you can eat it without any guilt. I wish I could give you guys a taste, but no worries you guys can make it yourself!
Pancake Ingredients:
- 1 & 1/2 cups whole wheat flour (you can use any flour you want really like oat flour)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup coconut flakes (optional)
- 1 Tablespoon of ground cinnamon
- 1 & 1/2 - 2 cups milk (room temp)- I used coconut milk
- 1 chia egg (just mix 1 tablespoon chia seeds with 3 tablespoons water) or normal egg
- 3 Tablespoons coconut oil (melted)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup or honey
Directions:
- Mix together dry ingredients in a bowl: flour, baking powder, salt, coconut flakes, and cinnamon.
- In a separate bowl, combine all the wet ingredients: milk, egg, coconut oil, vanilla extract, and maple syrup/honey.
- You should probably heat up your griddle or skillet by now. Then, gradually mix together the wet into the dry until well combined. This may take a bit of time till the whole wheat flour absorbs the milk and combines.
- Check the skillet or griddle to make sure it's hot. You can check this by put a couple of drops of water and making sure it sizzles.
- You can then start pouring some batter (around 1/2 - 1 cup) onto the griddle and wait for around 2-3 minutes or till there are bubble all over the surface of the pancake and the corner are golden brown then flip it. Wait for another 2-3 minutes and they are ready to serve.
- Repeat #5 till all the batter is finished and then go on to make your chocolate sauce!
