Vegetable Curry? I think yes x3 because that's how many plates of this I devoured.
Surprisingly simple and easy to make with the right spices!
Ingredients:


- 1 onion
- 2 garlic cloves
- Any mix of vegetables you like (I chose potatoes, carrots, celery, peas, corn, and green beans)
- 1 can of full fat coconut milk
- 1 cup of water
- Spices: 1 tbsp of curry powder, 1 tsp of turmeric, chili flakes (to taste), 1 tsp of cumin powder (or cumin seeds), 1/4 tsp ground cloves, 1/4 tsp ground cardamom
Recipe:
- Lightly fry your chopped onions (with cumin seeds if using them) until translucent. Then add the minced garlic and fry til fragrant.
- Add your potatoes, celery, and celery and allow to cook til fork tender (add water to make sure the bottom of the pan doesn't start to burn)
- Add the rest of your vegetables and cook through.
- Add your liquid and spices, stir, then salt to taste.
- Garnish with lime slices and enjoy!
