Vegetable Curry (Indian Inspired)

Vegetable Curry? I think yes x3 because that's how many plates of this I devoured.
Surprisingly simple and easy to make with the right spices!

Ingredients:

  • 1 onion 
  • 2 garlic cloves
  • Any mix of vegetables you like (I chose potatoes, carrots, celery, peas, corn, and green beans)
  • 1 can of full fat coconut milk
  • 1 cup of water
  • Spices: 1 tbsp of curry powder, 1 tsp of turmeric, chili flakes (to taste), 1 tsp of cumin powder (or cumin seeds), 1/4 tsp ground cloves, 1/4 tsp ground cardamom

Recipe:
  1. Lightly fry your chopped onions (with cumin seeds if using them) until translucent. Then add the minced garlic and fry til fragrant.
  2. Add your potatoes, celery, and celery and allow to cook til fork tender (add water to make sure the bottom of the pan doesn't start to burn) 
  3. Add the rest of your vegetables and cook through.
  4. Add your liquid and spices, stir, then salt to taste.
  5. Garnish with lime slices and enjoy!
