Carrot Cake Oatmeal

I don't know about you guys, but I haven't eaten carrot cake in a long while and was craving it. So, I took typical carrot cake spice and basically turned it into oatmeal form. #winning
The great thing about this is that there is a crunch factor from the carrots and walnuts while creamy and fluffy from the almond milk. 

So I'll stop with the teasing and tell you how to make your own!

Ingredients:

  • 3/4 cup rolled oats
  • 1 1/2 cups of water
  • 1/2 cup of almond milk
  • 1 tsp flax seeds
  • 1/2 tsp chia seeds
  • 1/2 cup of grated carrots
  • 1/2 apple chopped
  • 1/2 cup of chopped walnut (or any nut you like)
  • 1 tsp of cinnamon (or to taste)
  • 1/2 tsp ginger (or to taste)
  • 1/2 tsp nutmeg (or to taste)
  • pinch of salt
  • 1/2 cup of raisins
  • Coconut yogurt (optional topping)
Instructions:


  1. Add oats, water, flax seeds, and chia seeds to a pan. Cook on medium high heat and stir continuously till its nearly fully cooked.
  2. Add the grated carrots, chopped apple, walnuts, cinnamon, ginger, nutmeg, salt, and raisins. Cook till the apple is slightly tender but still has a crunch. 
  3. Then add the almond milk and stir through till the oatmeal is completely cooked.
  4. Pour your creamy oatmeal into a bowl and top with apple slices, molasses, chopped nuts, or anything you like!
