Cranberry Apple Crumble Ice Cream

Thanksgiving Dessert in summer form? That's exactly what this is! We had some cranberries and apples at home that my mom wanted to get rid off so I transformed it into a sauce that was the right amount of sweet to tangy and sour which is my favorite flavor combo in the world!!! It also has crunch from the apple and cinnamon crumble while the ice cream provides the creaminess to balance the dish out. Without further ado, here is the recipe!


Cranberry Apple Sauce Ingredients:

  • 1 bag of cranberries (16 oz)
  • 2 small Fuji apples
  • 1/4-1/3 cup of agave syrup (or sweetener of choice)
  • 1/2 cup water
Instructions:

  1. Wash the cranberries to get rid of any dirt 
  2. Add the cranberries, agave syrup, and water to a pot and place it over high heat til the cranberries pop and a sauce forms.
  3. While the sauce forms, chop the apple into cubes. Add them right after the sauce forms and turn off the heat from the pan. This allows the apples to maintain some of their crunch while also adopting some of the cranberry flavor. 
Cinnamon Crumble Ingredients:
  • 1 cup oats
  • 1 tsp of cinnamon
  • 1/8 cup of desiccated coconut flakes (optional)
  • 6 Medjool dates
Instructions:
  1. Place all the ingredients into a blender and pulse til a chunky/crumble texture forms.
  2. Place crumble mixture on a baking sheet and place in an oven for 10 minutes on 350/400 degrees F or til slightly brown.
  3. Take out and allow to cool for at least 5 minutes (this allows it to become crunchy as well).

Fluffy Chocolate Peanut Butter Pancakes & Ice Cream Deluxe

Sometimes I get really inspired to go above and beyond which results in recipes like this one! I mean chocolate on chocolate with peanut butter and ice cream? Can you really say no? I think not! Anyways, it's safe to say these were devoured by my family in less than five minutes (I really need to make more next time). I'm hoping to create videos soon so you can see how I make them! Without further ado, let's get into the recipe!

Chocolate Pancake Ingredients:

  • 3/4 cup of whole wheat flour
  • 1/4 cup of all purpose flour
  • 2 tbsp of cacao/cocoa powder
  • 2 tsp of baking powder
  • 1/4 tsp of salt
  • 1 tsp of cinnamon
  • 2 tbsp of sweetener (I used Stevia)
  • Pinch of salt 
  • 1 cup of almond buttermilk (1 cup of almond milk mixed with a 1 tsp of apple cider milk- let it sit and become frothy)
  • Splash of vanilla extract
  • 1 flax egg (1 tbsp ground flax seed mixed with 3 tbsp of water)
Instructions:
  1. Make banana ice cream (optional but completely recommended- recipe below) then place in freezer til needed.
  2. Make flax egg and almond buttermilk then set aside.
  3. Mix together dry ingredients (flour, baking powder, cacao powder, salt, cinnamon, and sweetener) and be sure to get rid of all the lumps.
  4. Mix together the wet ingredients (almond buttermilk, vanilla extract, and flax egg).
  5. Gradually add wet into dry while mixing till combined but not over-mixed (if you over mix they won't be fluffy).
  6. Cook on medium high heat for 3 to 5 minutes on each side (they should rise, bubble on top, and be easy to move). Continue til you finish all the batter!
  7. Stack the pancakes and layer with carob molasses and peanut butter!
  8. And if you want to take it over the top, then add Banana Ice Cream on top!(recipe below)
Banana Ice Cream Ingredients
  • 3 frozen bananas (slightly thawed)
  • Medjool dates (optional)
  • Cinnamon (optional)
Instructions:
  1. Add all the ingredients to a blender or food processor and blend til a soft serve consistency is formed- you can add some almond milk or water to help blend. That's it! (Yes I know way to simple)

Now just add your banana ice cream to your pancakes, drizzle some carob molasses or chocolate sauce, and add any fruit you desire! Deliciousness, healthy, and will surely make you happy!
